Regarding to your question, have some message to be shared here.
Firstly, you have to get some standard English examination such as TOEFL, GRE, GMAT etc, which may be different from one university to another.
Secondly, for Canadian PhD training system, its style stands in between the EU and American ones. You need to contact the Professor whose topic you are intereted in. With his agreement to take you, you can start the formal application procedure from the admission office of Graduate School and the secretarial office of the Faculy. You will be required to get your documents to be certified before presenting.
Thirdly, for Chinese students, they have to pay much more tuition as 3 times more than the local students around 8000 to 15000 Canadian Dollars per annum. So be sure if you scholarship enough covers the tuition and living cost for you. Otherwise, you can ask if the professor or the faculty can waive your tuition fee.
